Turkish Baked Rice Pudding (Fırın Sütlaç Recipe)
This Turkish baked rice pudding, known as fırın sütlaç, is creamy and lightly sweet with a beautifully caramelized top created by finishing the pudding in the oven.

- Cook the Rice
- Pour the milk into the cooked rice, add the sugar, and stir well. Bring the mixture to a gentle simmer.
- Cook gently for 10–15 minutes, stirring occasionally so the rice does not stick to the bottom of the pot.
- In a separate bowl, whisk together the starch, egg yolk, and 1/2 cup water until completely smooth with no lumps.
- Take one ladle of the hot rice pudding and slowly add it to the starch and egg mixture while stirring continuously. This gradually warms the egg mixture before it goes into the pot.
- Pour the tempered mixture back into the saucepan while stirring. Continue cooking for a few minutes until the pudding becomes slightly thicker.
- Stir in the vanilla, then remove the saucepan from the heat.
- Divide the rice pudding evenly between oven-safe individual dishes.
- Place the filled dishes in a deep baking tray, then carefully add water to the tray around the dishes to create a water bath.
- Bake at 200°C (400°F) until the tops develop the characteristic golden-brown and lightly caramelized finish. Watch closely toward the end so the surface browns without burning.
- Let the baked rice pudding cool slightly and serve warm, or refrigerate until completely chilled before serving.
