Chicken Vegetable Soup
This cozy Chicken Vegetable Soup combines tender chicken, potatoes, carrots, red pepper, onion, garlic, and warm spices in one pot. The vegetables are blended until creamy, then shredded chicken is added back for an easy, comforting fall and winter soup.

- Add the chopped onion and red bell pepper to a large pot, followed by the potato and carrot.
- Add the garlic cloves, salt, black pepper, cumin, and sweet paprika over the vegetables.
- Place the chicken breast fillet directly on top of the seasoned vegetables.
- Pour in 1 liter of water. Bring everything to a boil, then reduce the heat and cook for 30–40 minutes, until the vegetables are very tender and the chicken is completely cooked through.
- Once the chicken is fully cooked, remove it from the pot and set it aside for shredding.
- Using an immersion blender, carefully blend the vegetables and broth directly in the pot until completely smooth and creamy.
- Shred the cooked chicken into bite-size pieces using two forks, then return it to the blended soup.
- Add the chopped fresh parsley and stir everything together. Let the soup warm through, then serve while hot.
