Creamy Mushroom Orzo (Easy Risotto-Style Recipe)
This creamy mushroom orzo is an easy one-pan dinner made with tender mushrooms, soft onions, milk, butter, and melted cheese for a rich risotto-style texture without the extra work.

- Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and cook until softened and lightly translucent.
- Add the sliced mushrooms to the onion and continue cooking until they release their moisture, soften, and begin to develop a little color.
- Add the orzo to the pan and stir for 1–2 minutes so the pasta is evenly coated with the oil and mushroom mixture.
- Pour in the hot water and milk, then add the salt and black pepper. Stir well so the orzo is evenly distributed throughout the pan.
- Cook over medium-low heat, stirring occasionally, until the orzo is tender and has absorbed most of the liquid while still remaining creamy.
- Reduce the heat and stir in the butter and grated cheese until completely melted and incorporated into the orzo.
- Add the chopped fresh parsley and gently stir it through the creamy mushroom orzo.
- Remove the pan from the heat and serve immediately while the orzo is creamy and the cheese is still melted.
