Creamy Orzo with Vegetables
This creamy orzo with vegetables is an easy one-pot dish made with tender orzo, peas, carrots, potatoes, sautéed onion, milk, butter, and melted cheese.

- Heat the olive oil in a large pan over medium heat. Add the onion and sauté until softened and lightly golden.
- Add the orzo to the softened onion and cook for 1–2 minutes, stirring gently so the orzo is lightly toasted.
- Add the mixed vegetables and season with salt and black pepper. Stir to distribute the peas, carrots, and potatoes evenly through the orzo.
- Pour in the hot water and cook until the orzo becomes tender and has absorbed most of the liquid.
- Add the butter and milk once the orzo is nearly cooked. Stir gently and continue cooking briefly until the mixture becomes creamy.
- Sprinkle the grated cheese over the orzo, cover the pan, and let it sit over low heat until the cheese melts completely.
- Remove the pan from the heat and let the creamy orzo rest for a few minutes. Stir gently and serve while warm and creamy.
