Giant Crispy Chicken Schnitzel
This giant crispy chicken schnitzel is made with seasoned ground chicken, coated generously with panko breadcrumbs, and oven-baked until golden and crunchy outside while staying juicy inside.

- Preheat the oven to 200°C (390°F) using the conventional top and bottom heat setting.
- Blend the chicken breast in a food processor until it has the consistency of ground chicken.
- Add the minced garlic, salt, paprika, and black pepper to the ground chicken and mix until the seasonings are evenly distributed.
- Sprinkle flour generously over a sheet of parchment paper. Place the seasoned chicken mixture on top and spread it into one large, even layer.
- Dust the top of the shaped chicken lightly and evenly with all-purpose flour.
- Beat the eggs, then brush them evenly over the entire surface of the chicken.
- Cover the entire surface generously with panko breadcrumbs, pressing them gently so they adhere to the chicken.
- Place another sheet of parchment paper over the schnitzel and carefully flip the entire piece over.
- Repeat the coating process on the second side by adding flour, brushing with beaten egg, and covering generously with panko breadcrumbs.
- Drizzle a small amount of olive oil evenly over the breaded schnitzel to help the coating become golden and crisp in the oven.
- Bake for 40–45 minutes, or until the chicken is completely cooked through and the panko coating is crisp and golden brown.
- Let the schnitzel rest for a few minutes after baking, then slice it into portions and serve while the coating is still hot and crispy.
