Homemade Mayonnaise with Boiled Eggs
This easy homemade mayonnaise is made with boiled eggs, mustard, vinegar, and sunflower oil for a smooth and creamy mayo without raw eggs.

- Boil the eggs until the whites are completely set but the yolks remain slightly soft. Cool them until they are comfortable to handle, then peel.
- Place the peeled boiled eggs in a blender or food processor. Add the mustard, vinegar, and salt.
- Blend the eggs and seasonings until the mixture becomes smooth and no large pieces of egg remain.
- With the blender running, gradually add the sunflower oil. Continue blending as the mixture becomes thicker, smoother, and creamier.
- Check the texture of the mayonnaise. If you prefer a thicker consistency, gradually blend in a little more sunflower oil until it reaches the texture you like.
- Transfer the mayonnaise to a clean container or serving bowl. Use it immediately or refrigerate it before serving for a slightly firmer texture.
