Ingredients
Instructions
- Melt the butter in a large skillet over medium heat. Add the tomato paste and cook briefly, stirring it into the melted butter. Add the salt, sweet ground red pepper, black pepper, and cumin, then stir until combined.
- Arrange the chicken breast fillets directly over the seasoned tomato paste mixture in the skillet.
- Pour the room-temperature milk evenly over the chicken.
- Pour the sparkling mineral water over the chicken and milk mixture.
- Cover the skillet and cook the chicken over low to medium heat.
- Continue cooking for approximately 30–40 minutes, allowing the chicken to cook through and the liquid to reduce into a rich tomato sauce.
- Once the sauce has thickened and the chicken is fully cooked, check one of the fillets for tenderness.
- Pull a piece of chicken apart to check the texture, then serve immediately with plenty of the tomato sauce spooned over the top.
