Nevzine Dessert (Turkish Tahini Molasses Cake)
Nevzine is a traditional Turkish dessert made with tahini, walnuts, and molasses, baked until golden and soaked with syrup for a rich, soft, and deeply nutty flavor.

- Add the milk, tahini, vegetable oil, vinegar, baking powder, and vanilla to a large mixing bowl and stir until evenly combined.
- Add the flour gradually, mixing as you go, until a soft dough forms. Use only as much flour as needed to reach a dough that is easy to spread without becoming dry.
- Add the walnuts to the dough and mix gently until they are evenly distributed throughout.
- Transfer the dough to a greased baking dish and press it into an even layer. Smooth the surface, then create shallow lines or ridges with a fork if desired.
- Melt the butter and pour it evenly over the surface of the prepared dough.
- Bake in a preheated oven at 180°C (350°F) until the dessert is set and evenly golden on top.
- Add the sugar and water to a saucepan and bring to a boil. Once the sugar has dissolved, add the molasses and stir to combine. Remove from the heat and let the syrup cool slightly.
- Cut the baked dessert into portions, then slowly pour the warm syrup over the surface so it can soak evenly into every piece.
- Leave the nevzine to rest until the syrup has been absorbed and the texture becomes soft and moist.
- Top the individual portions with ground pistachios and serve after the dessert has had time to rest.
