Stuffed Cabbage Rolls
These Turkish stuffed cabbage rolls are filled with seasoned ground beef, rice, tomatoes, and onion, then slowly cooked in a rich tomato sauce until tender and juicy.

- Separate the cabbage leaves and boil them in hot water for about 3 minutes, or just until they become flexible enough to roll without tearing.
- Add the ground beef, rice, grated tomatoes, finely chopped onion, tomato paste, olive oil, salt, black pepper, and cumin to a large bowl. Mix until evenly combined.
- Once the cabbage leaves are cool enough to handle, remove or trim any very thick stem sections so the leaves can be rolled more easily.
- Place a small amount of the meat and rice mixture near one end of each softened cabbage leaf. Avoid overfilling because the rice will expand as it cooks.
- Fold the sides of the cabbage leaf inward over the filling, then roll it tightly into a compact parcel. Repeat with the remaining leaves and filling.
- Arrange the stuffed cabbage rolls snugly in a pot, placing them close together so they are less likely to open during cooking.
- Mix tomato paste with a little olive oil and enough water to create a pourable cooking sauce.

- Let the cabbage rolls rest for a few minutes after cooking, then serve warm with some of the tomato sauce spooned over the top.
