Turkish Ramadan Pide Bread
(Easy Ramazan Pidesi Recipe)

Ramadan pide is a traditional Turkish flatbread known for its soft texture and golden, slightly crispy crust. This homemade version is easy to make and perfect for iftar meals or everyday baking.

With a light and airy dough and a signature topping of sesame and nigella seeds, this bread is both simple and delicious.

Turkish Ramadan Pide Bread

Ingredients

  • 500 g flour

  • 400 ml water

  • 5 g instant dry yeast

  • 1 tsp sugar

  • 1 tsp salt

Topping Mixture (“Glaze”):

  • 1 tsp flour

  • 100 ml boiling water

  • 3 tbsp cold water

For Topping:

  • Sesame seeds

  • Nigella seeds

  • Olive oil

For Baking:

  • Breadcrumbs

👩‍🍳 How to Make Ramadan Pide

  1. Mix yeast, sugar, and warm water (around 42–43°C) and let it activate for 10–15 minutes.

  2. Add the mixture to flour and knead into a dough.

  3. Cover and let it rest for 20 minutes.

  4. Add salt and knead again, then let it rise for about 1 hour.

  5. Gently stretch the dough using olive oil.

  6. Prepare the glaze by mixing flour, boiling water, and cold water.

  7. Spread the glaze over the dough.

  8. Sprinkle sesame and nigella seeds on top.

  9. Preheat oven to 250°C (482°F).

  10. Sprinkle breadcrumbs on baking paper and place the dough on a hot tray.

  11. Place a heatproof dish with boiling water in the oven for steam.

  12. After 5 minutes, remove the water to help the crust crisp.

  13. Bake for 10–15 minutes until golden.
