Belen Tava (Turkish Oven-Baked Beef Recipe)
Belen Tava is a traditional Turkish oven-baked beef dish made with tender beef, peppers, tomatoes, shallots, garlic, and a richly seasoned tomato sauce, slowly roasted until juicy and tender.

- Cut the beef into bite-sized cubes. Cut the red and green peppers into pieces and prepare the tomatoes, shallots, and garlic.
- Arrange the beef, peppers, tomatoes, shallots, and garlic together in a large baking dish.
- Combine the tomato paste, pepper paste, sunflower oil, water, thyme, salt, black pepper, cumin, and red pepper flakes until evenly mixed.
- Pour the sauce over the beef and vegetables, then mix thoroughly so everything is evenly coated with the seasoned tomato mixture.
- Cover the baking dish with damp parchment paper to help retain moisture while the beef cooks.
- Bake in a preheated oven at 200°C (400°F) for about 1 1/2 to 2 hours, depending on the cut of beef, until the meat is tender and the vegetables are deeply roasted.
- Add small pieces of butter over the hot Belen Tava near the end of cooking or immediately after it comes out of the oven.
- Let the dish rest briefly after baking, then serve the tender beef and roasted vegetables hot with some of the rich pan sauce spooned over the top.
