Caramelized Onion Hummus
This caramelized onion hummus is ultra creamy, rich, and packed with flavor. Classic chickpea hummus is blended with tahini, garlic, lemon, cumin, and olive oil, then finished with deeply caramelized red onions for a sweet and savory Mediterranean-style dip.

- Thinly slice the red onion so the pieces cook evenly and soften at roughly the same rate.
- Heat a little olive oil in a pan over medium-low heat. Add the sliced onion and cook slowly for about 15–20 minutes, stirring occasionally, until the onion becomes very soft, deeply golden, and naturally sweet. Set aside.
- Add the cooked chickpeas to a food processor.
- Add the tahini, garlic, ground cumin, salt, black pepper, red pepper flakes, and lemon juice to the chickpeas.
- Blend the chickpea mixture until it begins to turn smooth and creamy. Stop and scrape down the sides of the food processor if necessary.
- With the food processor running, slowly add the olive oil and continue blending until incorporated.
- Add a small amount of water as needed and continue blending until the hummus reaches a smooth, creamy consistency.
- Transfer the hummus to a serving dish. Spoon the caramelized onions generously over the top, or gently fold some of the onions into the hummus for an even deeper onion flavor.
- Finish with a drizzle of olive oil and serve with bread, crackers, pita, or fresh vegetables.
