Homemade Wafer Rolls (Crispy Rolled Cookies with Chocolate Filling)
These homemade wafer rolls are thin, crisp pan-cooked cookies rolled while warm and filled with creamy chocolate spread for an easy crunchy dessert.

- Add the egg whites, powdered sugar, and a pinch of salt to a mixing bowl and whisk until smooth and evenly combined.
- Add the flour, starch, sunflower oil, and vanilla. Mix until you have a smooth, pourable batter with no visible lumps.
- Heat a non-stick skillet over medium heat. Keep the temperature moderate so the thin wafer has time to cook without burning.
- Add a small amount of batter to the pan and spread it into a very thin, even layer. The thinner the layer, the crispier the finished wafer roll will be.
- Cook the wafer until the surface is set and the underside is lightly golden. Work one wafer at a time so you can roll it immediately.
- While the wafer is still hot and flexible, wrap it around a thin rolling pin, wooden handle, or similar utensil to form a tight tube. Remove the utensil carefully and let the roll cool in shape.
- Allow the rolled wafers to cool completely. They will become firmer and crispier as they cool.
- Once completely cool, fill each wafer roll with chocolate spread. Add a little extra chocolate over the top if desired, then serve.
