I wanted to make classic crepes a little more fun, and this leopard pattern turned a simple breakfast into something that looks much more complicated than it actually is. The pattern is made from the same crepe batter, with cocoa added in two different amounts to create the lighter and darker spots. Once the design is in the pan, the plain batter goes right over the top. The result is a soft, thin crepe with a different leopard pattern every time. The first one might take a little practice, but once you get the technique, the rest come together quickly.

Make the Crepe Batter

In a bowl, whisk the eggs, sugar, milk, water, flour and sunflower oil together until the batter is smooth.

Divide and Color the Batter

Divide the batter into three portions. Keep the main portion plain. Mix 1 tablespoon cocoa powder into a small portion for the dark pattern and 1 teaspoon cocoa powder into a slightly larger portion for the lighter spots.

Create the Leopard Spots

Heat a nonstick pan over medium heat. Use the lighter cocoa batter to make small, irregular spots across the pan, then outline and add details to the spots with the darker cocoa batter.

Add the Plain Batter

Once the leopard pattern begins to set, pour enough plain batter over it to cover the surface of the pan in a thin, even layer.

Cook and Serve

Cook until the crepe is set, then flip and cook briefly on the other side. Repeat with the remaining batter and serve the crepes warm with your favorite fillings or toppings.
