- Drain the roasted red peppers well and gently pat away any excess moisture. Removing extra liquid helps keep the finished feta dip thick, creamy, and easy to scoop rather than watery.
- Add the roasted red peppers, feta or white cheese, fresh parsley, garlic, and pepper paste to a food processor. Breaking the cheese into smaller pieces first will help everything blend more evenly.
- Add the dried mint, cumin, red pepper flakes, and salt. Start with a little less salt if your feta is already quite salty, then adjust after blending.
- Blend until the ingredients come together into a creamy spread. For a smoother dip, process a little longer. If you prefer more texture, stop while a few small pieces of pepper and feta are still visible.
- Taste the dip and adjust the seasoning if needed. You can add more red pepper flakes for heat, a little lemon juice for brightness, or a small drizzle of olive oil if you want a softer, silkier texture.
- Transfer the roasted red pepper feta dip to a shallow serving plate. Spread it evenly, then finish with chopped walnuts and a little parsley before serving.
