Sesame Crusted Eggs
These sesame crusted eggs combine toasted sesame seeds, melted cheese, and perfectly cooked eggs in one pan. Inspired by the nutty flavor of Turkish simit, this quick breakfast has crisp, golden edges and a rich, cheesy center.

- Melt a small amount of butter in a non-stick pan over medium heat. Add a generous layer of sesame seeds and spread them across the pan, leaving space in the center for the eggs. Toast for 1–2 minutes, just until fragrant and lightly golden.
- Sprinkle the grated kashar cheese over the toasted sesame seeds, then crack the two eggs into the center of the pan. Keep the heat moderate so the sesame seeds continue to toast without burning.
- Season the eggs with salt and red pepper flakes, then scatter chopped green onions over the top. Continue cooking until the egg whites are set and the cheese around the edges is melted and beginning to turn golden.
- Once the cheese and sesame layer is golden underneath, carefully loosen the crispy edges with a spatula. Fold or lift sections toward the eggs while the cheese is still hot and flexible.
- Remove the pan from the heat and serve the eggs immediately while the sesame crust is still crisp, the cheese is melted, and the yolks are cooked to your preference.
