Some of my favorite breakfasts are the ones that turn a few familiar ingredients into something completely different. This simit with eggs and sucuk does exactly that. Crispy sesame-covered simit is arranged around the pan with kashar cheese, while eggs and slices of savory sucuk cook in the center. As everything heats together, the cheese melts between the pieces of simit and creates those irresistible cheese pulls. It’s warm, filling and made in one pan, making it a fun option for a weekend breakfast or brunch when you want something more satisfying than a classic egg breakfast.

How to Make Simit with Eggs and Sucuk
Prepare the Simit
Slice the simit into pieces and cut openings in the pieces for the cheese.

Melt the Butter and Add the Sucuk
Melt the butter in a large pan. Arrange the sucuk slices in the center, then place the prepared simit pieces around the outside of the pan.

Add the Eggs
Crack the eggs into the center of the pan around the sucuk, keeping the yolks intact.
Cook Until Set
Cover the pan with a lid and cook until the egg whites are set and the yolks reach your preferred consistency. The kashar cheese should be completely melted.

Finish and Serve
Sprinkle with red pepper flakes and chopped green onions. Serve immediately while the eggs are warm and the cheese is still melted and stretchy.
