Simit with Eggs and Sucuk
This easy Turkish simit with eggs and sucuk combines crispy sesame-crusted simit, melted cheese, savory sucuk and eggs in one pan for a warm, satisfying breakfast or brunch.

- Slice the simit into pieces and cut openings in the pieces for the cheese.
- Melt the butter in a large pan. Arrange the sucuk slices in the center, then place the prepared simit pieces around the outside of the pan.
- Crack the eggs into the center of the pan around the sucuk, keeping the yolks intact.
- Cover the pan with a lid and cook until the egg whites are set and the yolks reach your preferred consistency. The kashar cheese should be completely melted.
- Sprinkle with red pepper flakes and chopped green onions. Serve immediately while the eggs are warm and the cheese is still melted and stretchy.
